KERALA EGG ROAST / KERALA MUTTA ROAST 
        Kerala Mutta Roast / egg roast  is a famous simple yet delicious side dish that is easy to make, goes well with appams, idiappam, parottas and rice.

Preparation Time : 10 mins for cooking eggs.
Cooking Time : 15 mins.
Serves : 2 members.
Ingredients: 
1.     Eggs – 2 numbers.
2.     Mustards seeds – 1 tsp.
3.     Onions - 2 large finely chopped.
4.     Curry leaves - 1 spring.
5.     Green chilies – 2 chopped.
6.     Tomato – one small chopped.
7.     Ginger  - 1 table spoon finely chopped.
8.     Garlic  - 5 cloves finely chopped.
9.     Chilli Powder - 1 tsp.
10.   Pepper Powder - 1 tsp.
11.   Coriander Powder -1 tsp.
12.  Turmeric Powder -1/4 tsp.
13.   Garam Masala – ½ tsp.
14.    Coconut Oil - 4 tblspn.
15.   Salt to taste.
Method of Prepration:
1.Bring water to a boil in a saucepan and add salt to it, let the eggs boil for 8-9 minutes, drain the salt water and allow it to cool for 5-10 minutes. Peel the shells and set aside.
2.Heat oil in a pan, add mustard seeds and curry leaves. When mustard seeds splutters add finely chopped ginger, garlic and green chilies. Saute for some time.
3.Add the chopped onions and some salt, and let it roast a bit (this gives flavour to the dish).
4.Add the chopped tomatoes and give a good mix, let it cook until mushy.
5.Add red chilly powder, turmeric powder, coriander pepper powder and garam masala powder. Mix it well.
6.Add boiled eggs, Stir it, cover the pan and let it cook for 3- 5 mins.
7. Now our tasty egg roast is ready to serve.
8.Serve hot with appam, chappathi, idiappam, parottas and rice etc.
