Carrot Thoran / Carrot Sabji
      Carrot thoran / Sabji is one of easiest and tastiest side dish. It goes well with rice, chapathi etc. It is also one of the famous side dish of onam sadya. Let's see how we can prepare it.

Ingredients 
  1. Carrot- 2 cups chopped.
  2. Ginger – 1tsp.
  3. Green chilli - 3 nos
  4. Onion – 1 cup.
  5. Grated coconut  - ½ cup.
  6. Pepper Powder – ½ tsp.
  7. Salt.
  8. For tempering:

        Mustard seed – 1 tsp.
        Coconut Oil.
        Whole red chilly
        Curry Leaves.
Method of Preparation:
  1. Wash, clean and cut the carrot.
  2. Add ginger, green chillies, onion, grated coconut and salt. Mix well and keep aside.
  3. Heat oil in a pan and add mustard seed to splutter, then add red chilly and curry leaves.
  4. To this add carrot mixture, and saute for 2 mins. Reduce the flame.
  5. Cover the lid and cook it for some time.
  6. Stir occasionally. No need to add water.
  7. When carrots are cooked well, add ½ tsp. of pepper powder. Mix well.
  8. Switch off the flame and stir well.
  9. Now our carrot thoran is ready to serve.
  10. Serve hot with rice, chapathi etc!! Enjpoy!!!
