Kerala Style Chicken Curry

Kerala Style Chicken Curry
     Kerala Style Chicken Curry is a rich type of chicken curry. It goes well with rice, appam, chappathi, idiyappam, ghee rice etc. Let's see how we can prepare it....................

Ingredients:
1.    Chicken - 1 kg
2.    Onion – 2 cups.
3.    Garlic – 4-5 nos.
4.    Ginger – 2 pieces 2’’.
5.    Tomato – 2 nos.
6.    Green chillies – 4 -5 nos.
7.    Coconut milk – 2 cup.
8.    Coconut oil.
9.    Salt.
10. Vinegar – 2 tsp.
11. Curry leaves.
12.Coriander leaves.
For roasting:
1.    Whole red chillies – 6-8 nos.
2.    Coriander seeds – 3-4 tbspn.
3.    Cinnamon sticks - 2 one inch pieces.
4.    Cloves – 4-5 nos.
5.    Cardamom pods - 5 nos.
6.    Black peppercorn – 10 - 15 nos.
7.    Curry leaves.
8.    Fennel seeds – 2 tsp.
9.    Bay leaves -2 nos.
10.  Turmeric powder – 1 tsp. 
Methods of preparation:
1.Cut the chicken into medium sized pieces.
2.Heat oil in a pan, roast whole red chillies, coriander seeds, cinnamon sticks, cloves, cardamom pods, black peppercorn, curry leaves, fennel seeds, and turmeric powder. Allow it to cool and make a fine paste.
3. Heat oil in a pan. Add chopped onions, green chillies, ginger, garlic paste, tomato, coriander leaves and curry leaves, fry until it turns transparent.
4. Add vinegar and grounded paste.
5.Transfer chicken pieces to the masala. Mix well and close the lid and allow it to boil for 5 mins.
6.Add coconut milk and enough amount of salt to it. Allow it to cook.
7.Now our chicken are cooked well, oil are separated, then add thick coconut milk.
8.Sprinkle some curry leaves and 1 tbspn. of coconut oil. Switch of the flame.
9.Now our chicken curry is ready to serve.
10.Serve Kerala style chicken curry with rice , idiyappam, appam, chappathis etc……..

  1. Hi I have doubt, do we need to grind the roasted masala with water.My ground masala was red in color could it be bcos it was not roasted enough.
