Traditional Kerala Pavakka Achar / bitter guard pickle

   It is a type of pickle which we can prepare easy....

Things needed:
1.     Bitter guard              :        500 gms.
2.     Green chilli(small)  :        10-15 numbers.
3.     Tamarinds                :        small piece.
4.     Salt                           :       to taste.
For masala:
1.     Mustard seeds          :       1 tsp.
2.     Fenugreek  seeds     :       1 tsp.
3.     Turmeric powder    :        1 tsp.
4.     Chili powder           :        3 tsp.
5.     Asafetida powder    :        1 tsp.
For tempering:        
1.     Mustard seeds        :          1 tsp.
2.     Whole Red chilli    :          2 numbers.
3.     Oil                          :          1 table spoon.
4.     Curry leaves. 
Method of  Preparation :
1.     Clean and cut bitter guard ( Pavakka) into thin slices.
2.     Switch on the flame, and place a pan, allow to heat.
3.     Dry roast mustard seeds and fenugreek seeds.
4.     Pour oil in a pan, add mustard seeds, red chilli, curry leaves, turmeric powder and asafetida powder, stir well.
5.     Then add powdered mustard seeds and  fenugreek seeds.
6.     To this add the green chilli, tamarinds  juice and salt, boil well.
7.    Add cooked bitter guard (pavakka) to the mixture and stir well.
8.     Boil the pickle again and allow it to cool.
9.     It is better combination with rice.
