Muttamala and Mutta surka /Egg Garlands and egg white pudding.
         Muttamala and Mutta surka- the most famous Malabar delicacy. Garlands made out of egg yolk and an egg-white pudding, served together. Egg yolk is cooked in sugar syrup into garlands while egg whites are steamed into pudding. Let's see how we can prepare it..............

Ingredients 
Eggs – 10 nos.
Sugar – 1 cup.
Water - 1 1/2 cup.
Cardamom pods 3-5 nos. 
Method of Preparation:
1.Separate egg yolks and whites. Beat the egg yolk and keep aside.
2.Prepare the sugar syrup: for this boil water in a wide pan, add sugar. Boil until the syrup become string consistency.
3. For clearing dirt from the syrup, add a tspn. of egg white into this syrup and mix nicely. Then remove it.
a.     Muttamala /Egg Garlands
1.Take a disposable glass or a bowl and make holes its bottom.
2.Increase the flame of the syrup to high. Pour egg yolks into the glass, and rotate it in circular motion until all yolks in the glass is used up. Allow to boil for a few seconds.
3.Then reduce the flame, sprinkle some water over it, then strain the garlands out of the syrup. Take it into a plate with out breaking the garlands.
4.Increase the flame and repeat the procedure until all the yolks are used up.
b.    Mutta surka / Egg white pudding
1. Allow the remaining sugar syrup to cool.
2. Take egg white in a bowl, to this add sugar syrup and cardamom powder, beet it well.
3. Get ready with your steamer.
4. Pour this into a plate or round dish and steam it for 20-30 mts.
5. Allow it to cool and remold it. Cut it into desired shape and serve it along with egg garlands (muttamaala) on top.
