Irachi Pathiri Malabar Iftar dish
   Irachi Pathiri (Malabar Iftar dish) is a traditional North Kerala, Malabar recipe. Irachi Pathiri is one of the star Malabar dishes. Let's see how we can prepare it.............

Ingredients:
For the Pathiris:
1.       All purpose flour – 1 ½ cup.
2.       Salt – to taste.
3.       Oil – 2 tbsp.
4.       Lukewarm water.
For the filling:
1.       Chicken / Beef – 250 gms.
2.       Onion – 2 nos. big (chopped)
3.       Ginger – 1 tsp
4.       Garlic – 1 tsp
5.       Green chilis – 2 nos.
6.       Curry leaves – few (chopped)
7.       Coriander leaves – few sprigs (chopped)
8.       Salt.
9.       oil – 2 tbsp
10.    Turmeric powder – 1/2 tsp
11.    Red chili powder – 1 tsp
12.    Pepper powder – 1 tsp
13.    Garam Masala – 1 tsp.
14.    Coriander powder – ½ tsp.
For Coating and Frying:
1.       Eggs – 2 nos.
2.       Sugar – 1 tsp.
3.       Oil – for deep frying.
Method of Preparation:
1.Clean and wash the chicken pieces. Boil the chicken with turmeric powder  some salt. Once cooked drain the stock and shred it using hands.
2.Heat oil in a pan, add ginger paste, garlic paste, green chilies and onion, sauté for some time.
3.To this add turmeric powder, red chili powder, pepper powder, garam masala, and coriander powder.
4.When the raw smell of the spices goes, add the shredded chicken. Mix well. Make sure that the chicken completely covered with the onion mixture.
5.Finally add chopped coriander leaves, mix well ans switch of the flame.
6.Next step is to make dough. Mix together all purpose flour, salt and oil, knead well and make a soft dough.
7.By using this dough, make a small sized balls ( lemon sized). Roll this balls about 4 inches in diameter.
8.Place some filling at the centre  of  one pathiri and place another rolled out pathiri over it, gently press the edges together.
10.Then form a pleat around the edge. For preparing pleat, pinch at a point on the edge and gently pull it outwards and fold it back inside and press it in position slightly away from the point you started, that is, the pleat will be at an angle and continue all along the edge.
11.Like this make all the pathiris.  
12.In a bowl beat the eggs with sugar. Dip the pathiris in the egg mixture.
13.Heat oil in a pan and deep fry the stuffed pathiris until it turns golden brown. Flip over and fry the other side too.
14.Like this prepare all pathris like this.
15.Serve hot. Enjoy!!!!!!!!
