Chicken Mandi (Middle Eastern Dish) |
Chicken Mandi is one of the easiest and tastiest Middle Eastern Delicacy. Let's see how we can prepare it.....

Ingredients
- Chicken with skin - 1 kg.
- Basmati rice - 2 cups.
- Onion sliced - 1 large
- Garlic and ginger paste – 1 tsp.
- Mandi spices – 1 ½ tbspn.
- Butter – 1 tbsp.
- Salt to taste.
- 4 cups water
- Tomato puree - 1 large
- Olive oil.
- Green Chillies – 5 nos.
- Whole spices :-
- Cloves – 5-6 nos.
- Black pepper pods – 10 nos.
- Cardamom – 5-6 nos.
- Bay leaves – 2-3 nos.
- Cinnamon sticks – 3 nos.
Methods of Preparation:
- In large pot add olive oil and onion and fry it until soften.
- Then add ginger and garlic paste, green chillies, whole spices and tomatoes puree and cook for few minutes.
- Add chicken from skin side down and fry for few minutes
- Add 4 cups of water, 1 tbspn of mandi spice powder and enough amount of salt.
- Allow the chicken to cook. Remove the chicken from stock.
- Mix together with ghee/ butter, mandi spice powder and some salt. Pour this mixture over the chicken.
- Preheat the oven at 350 'F. Place the chicken in oven for 5-6 minute then switch the oven to grill mode and let it grill for another 5-6 minutes or until golden.
- Heat olive oil in a pan and fry basmathi rice.
- Add the rice and cook it until water dries and then cover it and let it cook on slowest heat.
- Now our rice cooked nicely. Now comes the special step which makes this dish taste different from rest of the common rice recipes
- We have to smoke the rice and for doing this let the coal burn to red hot.Put the burning coal over it and add 1 tbsp of oil and cover the lid. Let it smoke for 2 minutes.
- Now our chicken mandi is ready to serve. Serve it in a large dish with rice and chicken on top of it, along with tomato chutney.

For making mandi spice mixture;
( for 5 Tbspn. of spice mixture)
Ingredients:
- Green Cardamom – 1 Tbspn.
- Whole cloves – 1 Tbspn.
- Black Pepper corn – 1 Tbspn.
- Nutmeg – ½ Tbspn.
- Mace – 1/2Tbspn.
- Dry Ginger – 1 Tbspn.
- Bay leaves – 2 nos.
Grind the above spices to a smooth powder in a coffee grinder.
