Edichakka Thoran / Tender jackfruit Stir Fry is one of the tasty stir fry from Kerala. It is very tasty and easy to prepare. It goes well with plain rice. Let's see how we can prepare it....

Ingredients 
  1. Idichakka / Tender jackfruit  - 1/2 kg, chopped into fine pieces)
  2. Turmeric powder – ½ tsp.
  3. Salt
  4. Grated coconut - 1 cup
  5. Small onions- 3 nos
  6. Green chillies – 2-4 nos.
  7. Cumin – 1 tsp. 
  8. For seasoning:

  •     Oil - 2 tbsp
  •     Mustardseeds – 1 tsp.
  •     Dry red chillies - 4 nos
  •     Curryleaves

Method of Preparation:
  1. Chop  Idichakka / Tender jackfruit  into fine pieces.
  2. To this chopped jack fruit, add turmeric powder and salt.
  3. Pour enough amount of water and cook it well.
  4. Grind together the grated coconut, green chillies, small onion and cumin to a carouse form.
  5. Heat oil in a pan or a kadai. Add mustard seeds,  when the mustard seeds splutter, add the red chillies and curry leaves.
  6. Add the jackfruit strands and the ground coconut mixture.
  7. Saute it well.
  8. Cover the pan and allow it to cook for 5 mins in a medium to low flame.
  9. Our tasty tender jack fruit stir fry is ready to serve. Serve with rice.
