    Thurki Pathiri is a fantastic snack from Malabar. This dish is prepared by using chicken, beef,murron or egg stuffings. It is a stuffed fried pathiri with in another stuffed fried pathiri, a whole boiled egg placed innermost fried pathiri.  You can prepare many layers.  Let’s see how we can prepare it ………..

Ingredients 
1. For covering:
  • All purpose flour - 300g
  • Oil – for frying.
  • Water - as required
  • Salt - to taste

2. For filling
  • Beef, mutton or chicken - 250 g
  • Eggs – 5 nos.
  • Onion, finely sliced– 2 cups.
  • Ginger, crushed  - 1 tsp.
  • Garlic, crushed - 1 tsp.
  • Green chillies, chopped – 6.
  •  Red chilli powder - 2 tsp
  • Turmeric powder – ½  tsp
  • Garam masala – ½  tsp
  • Pepper powder – ½ tsp.
  • Coriander leaves.
  • Curry leaves.
  • Salt - to taste
  • Oil - 1 tbsp

Method of Preparation:
  • Mix together the meat with ¼ tsp. of pepper powder, red chilli powder, turmeric powder  and salt. Cook it well. Mince it and keep it aside.
  • Hard boil the eggs, peel it’s shell and keep it aside.
  • Next step is to prepre meat / chicken masala and egg masala.

1. For preparing meat/ chicken masala :
  • Heat one table spoon oil in a pan and sauté the onions, green chillies, ginger and garlic, curry leaves by adding some salt. Stir it until the onion becomes transparent.
  • Now add red chilli powder, turmeric powder, and garam masala. Mix well.
  • Then add minced meat, keep stirring till all the water is absorbed.
  • Add  some coriander leaves and switch of the flame.

2. For preparing egg masala :
  • Beat one egg and keep it aside.
  • Heat one table spoon oil in a pan and sauté the onions, green chillies, ginger and garlic, curry leaves by adding some salt. Stir it until the onion becomes transparent.
  • Now add red chilli powder,and turmeric powder. Mix well.
  • Then add beated egg, keep stirring till all the water is absorbed, switch of the flame.

3. For making chappathi:
  • Mix the maida with enough amount of  water and salt.
  • Knead it and make a soft dough. Take small a portion of the dough and shape into balls. Roll out the balls into medium (4 nos. )and large  ( 4 nos.) thin chapathies.

To make the first layer of Thurki Pathiri
  • Take one medium sized chappathi, sprinkle some all purpose flour on the middle part and put a table spoon of spicy meat/ chicken filling in its centre. Place one boiled egg over it. Shape it to round by bring the edges together and pinching the center. Remove the excess dough at the tip.
  • Like this prepare other 3 pathiries.
  • Heat oil in a pan and deep fry the Thurki pathiris in batches till they turn golden brown. Keep it aside.


To make the second layer of Thurki Pathiri
  • Take one large sized chappathi and sprinkle some all purpose flour over it, Put a table spoon of egg filling in its centre. Place previously fried stuffed puri. Shape it to round by bring the edges together and pinching the center. No need to remove the excess dough at the tip. Make it like a money bag ( Kizhi)
  • Like this prepare other pathiries also. Deep fry the Thurki pathiris till they turn golden brown.
  • Sereve hot, enjoy!!!

Note:
  • If you want more layres of thurki pathiri, make different types of filling like sweet layer, semolina layer, mutton layer, beef layer etc.
  • The procedure of assemblying of pathti is same.
