The dosa batter / Idali batter is made by using soaked rice and lentil, grind it into a smooth batter and ferment it. This same batter can be used for soft idali, crips dosa and uthappam.
Steps to make Idli - Dosa batter consist of -
  • Soaking
  • Grinding
  • Fermenting.

Ingredients
  • Idli rice - 3 cups
  • Washed urad dal - 3/4 cup.
  • Fenugreek seed – 1 tsp
  • Cooked rice – ½ - 1 cup.
  • Salt - as needed
  • Water.

Method of Preparation:
  1. Wash rice and lentils three to four times. Soak the rice for overnight. (minimum 2 hours)
  2. Soak urad dal and fenugreek seed together for overnight or minimum 2 hours.
  3. Grind it by using grinder or mixture. Add rice to the blender / grinder with 1 cup of water. Add ½ cup of water for every 10 minutes. Rice takes 25-30 minutes to grind well. Add cooked rice. Grind it well.
  4. Choose a big vessel such that there is enough space for the batter to rise well. Pour the rice batter to it.  
  5.  Grind the urad dal and fenugreek seeds by adding 1/2 cup of water (don’t add more water in the beginning). Make it fluffy, it will take 10-15 mins.
  6. Remove the urad dal batter and transfer it in to vessel.
  7. Mix it well by using your hands or hand mixture.
  8. Close the vessel tightly with a lid and keep in a warm place. Leave for a minimum of 8- 12 hours for fermentation.
  9. Next morning, batter would have risen doubled.
  10. Mix gently. Don’t mix vigorously, it will loss softness of our Idali. Add salt.
  11. By using the same batter you can make soft idali, Utttappam and crisp dosa.
