Beetroot Pachadi

Beetroot Pachadi

Pachadi by using Beet root.........
Beet root pachadi is an easy, tasty and colourful pachadi. It is one of the side dish of onam sadya. Let's see how we can prepare this pachadi....

Ingredients 
1. Beetroot (grated) -2 cups.
2. Curd – 1/2 cup.

For tempering 
 1.Mustard seeds – 1tsp.
2.Coconut oil – 2 tsp.
3.Curry leaves
4. Whole red chilly.- 2 nos.

For coconut paste
1.     Mustard seeds – 1 tsp.
2.     Cumin seeds – ½ tsp.
3.     Grated coconut – 1 cup.
4.     Green chillies  -3-5 nos.
5.     Garlic – 2-3 nos.
6.     Ginger- ½ inch piece.
7.     Water.

Method of Preparation:

1. Clean and grate beetroot, and keep aside.
2. Cook the grated beetroot and salt in a pan.
3. Meanwhile make coconut mixture. For this grind together with mustard seeds, cumin seeds, grated coconut, ginger, garlic and green chillies into a paste form.
4. Once the beetroot is cooked well, add the grounded coconut paste to the pan, saute it well. Let it cook for another 5 minutes in medium flame, Allow the water to evaporate.
6. Then switch off the flame and  transfer the beaten curd to the pan and warm it, do not allow it to boil.
7. Heat another pan, splutter mustard seeds in coconut oil,  when it splutters add curry leaves whole red chillies. Pour this tempering in to the cooked pachadi.
8. Now our beetroot pachadi is ready to serve. Serve with plain rice.
