Kaipola / Pazham cake
  Kaipola is an authentic Malabar dish,  which can be made easily. Kaipola is usually prepared during Ramadan days. This is a sweet dish  made by using ripped bananas, nuts and eggs. Let's see how we can prepare it............

Ingredients

1.       Banana (Nendrapazham) - 3 chopped.

2.       Eggs - 2 nos.
3.       Ghee - 5 tsp.
4.       Sugar - 1/2 cup.
5.       Cashew nuts - 10 nos.
6.       Raisins - 10 nos.
7.       Cardamom - 2 crushed. 
Method of Preparation:
1.Chop banan to small pieces. Heat a pan,add 3 tsp ghee and add the chopped  banana (nendrapazham) to it and saute for 5 minutes.
2. Take a bowl, add 2 eggs, crushed cardamom, raisins, cashew nuts
and sugar. mix well.
3. Add cooked banana and mix to it.

4.Heat a non stick pan on a low flame. Add 2 tsp of ghee. Pour banana mixture into the pan and close with a lid. Allow it to cook for 8 -10 minutes.
5. Then flip it over to a plate and reverse back as it is and cook the other side for another 8 minutes.
6. Tasty Pazham Cake is ready to be served.
7. Serve hot. Enjoy!!!!!!
