Palappam is most
popular among Kerala (God’s own country) breakfast recipes that are healthy and
easy to make.
It is very tasty and easy to make, Usually served with vegetable stew or chicken stew, sweetened coconut milk, Kerala egg cury, egg roast, kerala istu and kadalacurry.

Ingredients
1.Raw rice
flour(very nice ) - 2 cups.
2.Active dry yeast
- 1 tsp.
3.Sugar – 2 tsp.
4.Semolina
/ rice flour - 3 tbsp.
5.Coconut milk – 1cup.
6.Salt.
Method of Preparation:
1.Cook 2 tsp. of rice/ semolina with 2 glasses of water till it becomes soft & loose. Let it cool. ( 'Kappi Kachiyathe' in malayalam. )
2.Add 1/4 glass of lukewarm water to yeast & 1/2 teaspoon sugar. Allow it to rise.
3. Take 2 cups rice flour in a vessel, add 'kappi kachiyathe', yeast and ½ 1 cup of water. Mix well.
4. Allow it to ferment for 6-8 hours or overnight.
5.Add coconut milk, sugar & salt, mix well. Make sure that the batter is not too loose . It should have a consistency of dosa batter. Keep it for 1 hours.
6. Heat
an appam pan or a deep non-stick pan (and grease it lightly with oil).
7.Pour a
ladleful of the batter into it and slowly rotate the pan in a circular motion
so that a thin layer forms on the side while the middle remains thick.
8.Cover and cook
for a minute, remove the appam when the middle fluffy part is cooked.
9.Like prepare all the appams.
