Kerala Istu / Kerala Potato stew
    Kerala stew is a beautiful combination of potatoes and coconut milk. It goes great with Appams and idiyappam. Enjoy this great dish!!!!!!!!!

Preparation  time         :         20 min (including boiling potato)
Cook time                    :        15 mins

Serves                           :        4 nos.
Ingredients:
1.     Potatoes                 – 2 medium, boiled & peeled.
2.     Onion                     – 1 medium, sliced.
3.     Green Chillies        –  3 cut in to 2.
4.     Salt                          – to taste.
5.     Coconut Milk          –  200ml.
6.     Curry Leaves           – 1 sprig.
7.     Coconut Oil             – 1/2 tbsp.
8.     Water .
Methods of Preparation:
1.  Take a pan, add lightly mashed Potatoes, Onions, Green Chillies, some curry leaves, salt and some water.
2.  Close the lid and allow to boil.
3.  Once it has come to a boil, uncover and add coconut milk and some curry leaves.

4. Mix well and allow it to come to another boil.
5. Drizzle ½ tsp.  coconut oil.
6. Cover and let it rest of a couple of minutes. This allows the aroma and the flavor to seep in.
7. Serve hot with appam and idiyappam.
