Kerala Style Vegetable Rava Upma
        Upma is my all time favorite ! Upma is a traditional south Indian breakfast or evening snack dish made from semolina.
         This is a modern version of south Indian upma is how I make it at home and adapted from my mom’s recipe.

Preparation  time :  5 mins.
Cooking  time      : 15 mins.
Serves                   : 2 members.
Ingredients:
1.     Rava / Sooji (Semolina)   - 1cup. (roasted or regular)
2.     Onion                                -1 chopped.
3.     Cabbage                            - ¼ cup chopped.
4.     Capsicum                         - ¼ cup chopped.
5.     Ginger paste                      - 1 tsp.
6.     Beans                                 - ¼ cup chopped.
7.     Carrot                                 - ¼ cup chopped.
8.     Green Chillies                    - 3 slit sideways.
9.     Green Peas frozen or fresh - 1/4 cup.
10. Coriander leaves                  - Finely chopped
11.   Salt to taste
12.  Oil                                       - 2 tblsp.
13.  Soya sauce                           - ½ tsp.
14. Water.

For Seasoning:
1.      Mustard Seeds                   - 1 tsp.
2.     whole Red Chili
3.     Urad Dal                             - 1 tsp.
4.     Curry leaves.

Methods of Preparation:

1.Heat oil in a pan.
2.Add mustard seeds, when it crackling add the curry leaves, red chilies and urad dhal. 
3.Then add onions and some salt, fry till they become transparent.
4.Now add the green chilies and ginger. Mix it well. 
5.Fry for a minute.
6.To this, add carrots, Beans, capsicum, and cabbage, Mix well allow it to 1/2 cook.
8.Add Soya sauce and mix well. 
9.Add green Peas and coriander leaves. Mix well. 
10.Add Water and salt,  let it come to a boil. For 1 cup of semolina add 1 cup of water.
11.Lower the flame and add the semolina to it.
12.Keep on stirring while you add the semolina. Keep on stirring, and level it.
13.The semolina will absorb water and swell and begin to cook.
14.Reduce the flame, cover by using lid, and let it cook for 2- 3 minutes. 
18.Switch off the flame and wait for another 5 minutes.
19.Open the lid and stir well. Now our dry vegetable upma is ready. 
20.Garnish upma with coriander leaves.
21.Serve upma hot. Enjoy!!!!
