Ottada / Muttayappam

Ottada / Muttayappam
        Muttapathiri / oottada…….... It is a kerala pan cake. It is a super delicious break fast in Malabar. Let's see how we can prepare it……….

Ingredients
1.     Rice -1cup. (You can also use rice flour.)
2.     All purpose flour - 1 cup.
3.     Egg – 1.
4.     Salt to taste.
5.     Coconut Milk – 1 cup.
6.     Water as required.
Method of preparation:
1.Take a grinder, Grind together with soaked rice, egg and coconut milk. When it grind well,  add all purpose flour, enough amount of water and salt. And make  medium-thick consistent batter like that of Dosa.
2.Heat ottada pan (mud pan) onto the stove top. And keep the flame to high so that the pan  gets heated.
3.Then reduce the flame and pour one ladle full of batter onto this. Do not flatten it with the ladle as we do usually for dosa. When you see bubbles or holes coming out, Then cover it.
5.When the appam is fully filled with holes and it looks cooked, take out from the thava. No need to flip them.
6.Serve with coconut milk, chicken or egg curry.
