Vattayappam Kerala Style വട്ടയപ്പം

Vattayappam Kerala Style
        Vattayappam is one of the traditional dish from Kerala God's own country. It is a steam cake made by using rice, coconut milk, sugar and yeast. Here I am explaining you a simple version of vattayappam. Let's see how we can prepare it.....

Ingredients
1.     Rice Flour – 2 cups.
2.  Coconut milk– 1 cups ( thick).You can also use grated coconut.
3.     Sugar – 1/2 cup
4.     Yeast – 1/2 teaspoon Sugar – 1/2 teaspoon
5.     Raisins – for garnishing
6.     Salt
7.     Ghee.
8.     Cardamom -2nos.
Method of Preparation:
1.Cook 2 tsp. of rice/ semolina with 2 glasses of water till it becomes soft & loose. Let it cool. ( Kappi kachal)
2.Add 1/4 glass of lukewarm water to yeast & 1/2 teaspoon sugar. Allow it to rise.
3. In a bowl take 2 cups rice flour, to this add kappi, yeast, sugar and salt& mix well.
4. Allow it to ferment for 6-8 hours or overnight.
5.After that add coconut milk & cardamom, mix well. Make sure that the batter is not too loose . It should have a medium consistency. Keep it for 1 hours.
6. Get ready with steamer. Apply a little ghee in a round plate / vattayappam try. Pour the batter into it. Put some raisins on the top. Steam it for 20 – 25 minutes.
7.Cut in to desired size. Serve hot with nadan chicken curry. Enjoy!!!
