Egg masala is a famous side dish
that goes well with appams, idiappam, parottas and rice. A simple yet delicious
side dish that is easy to make.

Preparation Time : 10 mins for cooking eggs.
Cooking Time : 15 mins.
Serves : 2 members.
Ingredients:
1. Eggs – 3 numbers.
2. Tomato paste – one small .
3. Onions - 2 large finely chopped.
4. Curry leaves - 1 spring.
5. Green chilies – 2 chopped.
6. Ginger
- 1 table spoon finely chopped.
7. Garlic - 5 cloves
finely chopped.
8. Chilli Powder - 1 tsp.
9. Pepper Powder - 1 tsp.
10.Coriander Powder -1 tsp.
11.Turmeric Powder -1/4 tsp.
12.Garam Masala – ½ tsp
13.Coconut Oil - 4 tblspn.
14. Salt to taste.
15. Mustards seeds – 1 tsp.
Method of Prepration:
1.Bring water to a boil in a saucepan and add salt to it, let
the eggs boil for 8-9 minutes, drain the salt water and allow it to cool for
5-10 minutes. Peel the shells and set aside
2.Heat oil in a wide pan, put boiled eggs to it. Add red
chilly powder and sire well for 3- 5 minute.
3.Remove egg from the pan.
4.On the same oil add chopped onions, and let it roast a bit
(this gives flavor to the dish). You can add salt at this point. Add
ginger, garlic, green chilies and tomato paste.
5.When it boil, add red chilly powder, turmeric
powder, coriander pepper powder and garam masala powder. Mix it well, allow to
boil.
6. Cool it for 10 minutes and
grind well, make a smooth paste.
7. Again boil, make thick gravy.
8. Place eggs ( cut in to two ) on the top of the
gravy. Garnish with coriander leaves.
9. Now our egg masala is ready to serve. Serve Hot. Enjoy!!!!
