Bird’s Nest / Kilikoodu Malabar special Iftar Dish

Bird’s Nest / Kilikoodu 
       Bird nest/ kili koodu is one of the famous snack from Malabar. Usually we are preparing it in ramzhan season. You can use any stuffing for preparing this, like chicken, mutton, vegetables, fish etc.

Ingredients
1.     Fish (Tuna) – 250gm.
2.     Potato – 250 gm.
3.     Fennel seeds – 1 tsp.
4.     Onion – 1 finely chopped.
5.     Ginger paste – 1 tsp.
6.     Garlic paste- 1 tsp.
7.     Green chillies – 2 nos.
8.     Curry leaves.
9.     Coriander leaves.
10.   Garam masala- ½ tsp
11.   Chilly powder- ½  tsp
12.   Turmeric powder- ¼ tsp
13.   Black pepper powder - ½ tsp.
14.   Coriander powder- 1 tsp
15.   Lime juice – 1 tsp.
16.   Vermicelli – ½ cup.
17.    Egg – 1.
18.    Salt.
19.    Oil.

Method of Preparation:

1. Cook tuna by adding turmeric powder and salt, Shred it and keep aside.
2. Cook potato by adding salt, mash it and keep aside.
3. Heat oil in a pan. Add fennel seeds, finely chopped onion, ginger paste, garlic paste, green chillies, curry leaves and coriander leaves. Stir well.
4.To this add garam masala, chilly powder, turmeric powder, black pepper powder, coriander powder and some salt. Mix well.
5. Transfer shredded tuna, lime juice and mashed potato to the pan and mix well. Now our filling is ready. Switch of the flame and let it cool down.
6. Make small balls out of the tuna mixture and flatten it by using your hands, keep aside.
7. Heat oil in a pan for deep frying this cutlets. 
8. Spread the broken vermicelli on a plate and beat an egg. 
9. Dip the tuna cutlets first in beaten eggs and then coat it generously with vermicelli.
10. Fry till the both sides becomes golden brown.
11.Place the fried tuna cutlets on a paper towel.
12.Serve hot, Enjoy!!!
