Payasam is a
healthy dessert of Kerala, it is also known as traditional dessert. Parippu payasam is an easy and delicious payasam from kerala. Let's see how we can prepare it.

Ingredients:
- Cherupayar Parippu/Moong dal - 200 gm
- Jaggery - 400 gms
- Thick coconut milk- 1/2 – 1 cups.
- Thin coconut milk: 3-4 cups.
- Dry ginger powder – ½ tsp.
- Cardamon: 3-5 nos.
- Cumin powder - 1/2 tsp.
- Rasins – 1 tbspn.
- Cashewnuts – 1 tbspn.
- Coconut pieces - a handful of finely sliced.
- Ghee – 1 tsp.
Method of preparation:
- Heat 1 tsp of ghee in a pan.
- Add moong dal to this, and roast it. Pour 3-4 cups of thin coconut milk into the pan.
- Cook it for ½ an hour or until it becomes mashy. You can also use pressure cooker.
- Meanwhile, melt the jaggery. Strain it to remove the dirt.
- Add the melted jaggery to the dal cooked dal and mix well. Bring it to a boil and simmer it for 20-30 minutes. Stir in between to prevent sticking to the bottom.
- When the melted jaggery will be reduced by half, add the thick coconut milk.
- Do not allow it to boil after adding the thick milk. Once it starts to boil switch of the fire.
- Then add dry ginger powder, cardamom and cumin powder.
- Heat a tsp of ghee in a pan and fry the coconut pieces, cashew nuts, and raisins.
- Sprinkle them on top of the payasam.
- Now our parippu payasam is ready to serve.
