Cherupayar Parippu Payasam / Parippu Payasam
     Payasam is a healthy dessert of Kerala, it is also known as traditional dessert.  Parippu payasam is an easy and delicious payasam from kerala. Let's see how we can prepare it.

Ingredients:

  1. Cherupayar Parippu/Moong dal - 200 gm
  2. Jaggery - 400 gms 
  3. Thick coconut milk-   1/2 – 1 cups.
  4. Thin coconut milk: 3-4 cups.
  5. Dry ginger powder – ½ tsp.
  6. Cardamon: 3-5 nos.
  7. Cumin powder - 1/2 tsp.
  8. Rasins – 1 tbspn.
  9. Cashewnuts – 1 tbspn.
  10. Coconut pieces - a handful of finely sliced.
  11. Ghee – 1 tsp.

Method of preparation:
  1. Heat 1 tsp of ghee in a pan.
  2. Add moong dal to this, and roast it. Pour 3-4 cups of thin coconut milk into the pan.
  3. Cook it for ½ an hour or until it becomes mashy. You can also use pressure cooker.
  4. Meanwhile, melt the jaggery. Strain it to remove the dirt. 
  5. Add the melted jaggery to the dal cooked dal and mix well. Bring it to a boil and simmer it for 20-30 minutes. Stir in between to prevent sticking to the bottom. 
  6. When the melted jaggery will be reduced by half, add the thick coconut milk.
  7. Do not allow it to boil after adding the thick milk. Once it starts to boil switch of the fire.
  8.  Then add dry ginger powder, cardamom and cumin powder.
  9. Heat a tsp of ghee in a pan and fry the coconut pieces, cashew nuts, and raisins.
  10. Sprinkle them on top of the payasam.
  11. Now our parippu payasam is ready to serve.
  12. Serve hot. Enjoy!!!!!!!!!!!!!!
