Kozhi Pathiri / Chicken pathiri is a traditional North Kerala,
Malabar recipe. Kozhi Pathiri is one of the star Malabar
dishes. You can serve it as snack, Iftar dish or main dish. Let's see how we

Ingredients:
For the
Pathiris:
- Rice flour– 1 cup.
- Salt – to taste.
- Boiling water.
For the
filling:
- Chicken – 250 gms.
- Onion – 2 nos. big (chopped)
- Ginger – 1 tsp
- Garlic – 1 tsp
- Green chilis – 2 nos.
- Curry leaves – few (chopped)
- Coriander leaves – few sprigs (chopped)
- Salt.
- oil – 2 tbsp
- Turmeric powder – 1/2 tsp
- Red chili powder – 1 tsp
- Pepper powder – 1 tsp
- Garam Masala – 1 tsp.
- Coriander powder – ½ tsp.
Method of
Preparation:
- Clean and wash the chicken pieces. Boil the chicken with turmeric powder some salt. Once cooked drain the stock and shred it using hands.
- Heat oil in a pan; add ginger paste, garlic paste and green chilies, sauté for a minute. Add onion and sauté it.
- Add turmeric powder, red chili powder, pepper powder, garam masala, and coriander powder.
- When the raw smell of the spices disappears add the shredded chicken. Mix well to ensure that the chicken is uniformly mixed with the onion mixture.
- Finally add chopped coriander leaves and remove from heat.
- Mix together rice flour and salt. Add boiling water and make a soft dough.
- Divide it into two pieces. Roll it out to two thick pathries in a banana leaf or foil paper.
- Place filling at the centre of a pathiri and place another rolled out pathiri over it and gently press the edges together.
- Steam it for 20 mins.
- Now our pathiri is cooked well.
- Cut pathiri in to small pieces. Serve hot.
