Kozhi Pathiri / Chicken Pathiri Malabar Snack

      Kozhi Pathiri / Chicken pathiri is a traditional North Kerala, Malabar recipe. Kozhi Pathiri is one of the star Malabar dishes. You can serve it as snack, Iftar dish or main dish. Let's see how we can prepare it..........

Ingredients:
For the Pathiris:

  1. Rice  flour– 1 cup.
  2. Salt – to taste.
  3. Boiling water.
For the filling:
  1. Chicken – 250 gms.
  2. Onion – 2 nos. big (chopped)
  3. Ginger – 1 tsp
  4. Garlic – 1 tsp
  5. Green chilis – 2 nos.
  6. Curry leaves – few (chopped)
  7. Coriander leaves – few sprigs (chopped)
  8. Salt.
  9. oil – 2 tbsp
  10. Turmeric powder – 1/2 tsp
  11. Red chili powder – 1 tsp
  12. Pepper powder – 1 tsp
  13. Garam Masala – 1 tsp.
  14. Coriander powder – ½ tsp.
Method of Preparation:
  1. Clean and wash the chicken pieces. Boil the chicken with turmeric powder  some salt. Once cooked drain the stock and shred it using hands.
  2. Heat oil in a pan; add ginger paste, garlic paste and green chilies, sauté for a minute. Add onion and sauté it.
  3. Add turmeric powder, red chili powder, pepper powder, garam masala, and coriander powder.
  4. When the raw smell of the spices disappears add the shredded chicken. Mix well to ensure that the chicken is uniformly mixed with the onion mixture.
  5. Finally add chopped coriander leaves and remove from heat.
  6. Mix together rice flour and salt. Add boiling water and make a soft dough.
  7. Divide it into two pieces. Roll it out to two thick pathries in a banana leaf or foil paper.
  8. Place filling at the centre  of  a pathiri and place another rolled out pathiri over it and gently press the edges together.
  9. Steam it for 20 mins.
  10. Now our pathiri is cooked well.
  11. Cut pathiri in to small pieces. Serve hot.
