Egg Biryani Kerala Style

      You can prepare biriyani by using chicken, mutton, fish etc. Here iam preparing biriyani by using eggs.It is the most easy, tasty and best egg biryani i have tried. Let's see how we can prepare it.........

Ingredients 
a.     For egg:
1.      Egg- 4 nos.
2.     Pepper powder – ½ tsp.
3.     Chilly powder – ½  tsp.
4.     Coriander powder – ½  tsp.
5.     Turmeric powder – one pinch
6.     Garam Masala – ½ tsp.
b.    for rice:
1.     Basmati Rice – 1 cup.
2.     Onion – 1 cup.
3.     Ginger paste – 1 tsp.
4.     Garlic paste – 1tsp.
5.     Green Chillies – 4 – 5 nos.
6.     Biryani masala – 2 tsp.
7.     Plain Yogurt – ½ cup.
8.     Fresh Coriander leaves.
9.     Mint leaves.
10.   Saffron.
11.   Rose water.
12.   Ghee.
13.   Oil.
14.   Salt.
15.   Whole garam masala
         1. Green Cardamom pods – 1/4 cup
         2. Fennel Seeds – 2tbspn.
         3. Cloves – 2tabspn.
         4. Star Anise – 2nos.
         5. Cinnamon sticks- 3 nos( 2" piece)
         6. Bay leaves.
c.      For garnishing:
  1.     Fried onions.
  2.     Cashew nuts.
  3.     Raisins.
  4.     Coriander leaves.

Methods of Preparation:
1. Wash and soak rice for at least ½ hour.
2. Boil eggs. Remove the shell of it and give four long cuts on each egg without separating it.
3. Heat ghee in a pan, add eggs, pepper powder, chilly powder, coriander powder, turmeric powder, garam masala and some salt. Fry it for 5 mins in a low flame.
4.In a wide pot, heat ghee or olive oil. Add whole spices and onions. Fry it until they become transparent.
5.Add ginger garlic paste, green chillies ,mintleaves, coriander leaves, biryani masala, lemon juice and curd. Sort well.
6.Transfer the soaked rice. Fry it for 5 mins.
7.Add boiling water to the rice. For I cup of rice add 1 1/2 times the amount water. Add enough amount of salt and bring it to boil.
8.When the air holes appear on the rice surface, reduce the stove heat to low. Cook until all of the water has absorbed.
9.Transfer eggs to the rice.
10.Sprinkle fried onions, cashew nuts, raisins and coriander leaves. Sprinkle some saffron water and rose water.
11.Close the lid and keep it for 30 mins.
12.Now our yummy egg biriyani is ready to serve.
13.Serve with pickle, raitha etc…..
