Kannappam Malabar Dish

Kannappam Malabar Dish
      It is one of the easy and delicious breakfast dish from north malabar. The moulds with batter looks like ‘kannu’ ( eyes), that's why this name. Let's see how we can prepare it...........

Ingredients:
a.     For batter:
1.     Basmathi rice / white rice – 1 cup.
2.     Boiled rice - 1/4 cup.
3.     Grated coconut – ¼ cup.
4.     Cumin – 1 tsp.
5.     Egg – 1 cup.
6.     Salt.
7.     Baking soda – ½ tsp.
b.    For masala:
1.     Chicken- 1cup, cooked and chopped
2.     Onion – 1 chopped.
3.     Ginger paste – 1 tsp.
4.     Garlic paste – 1 tsp.
5.     Green chilles – 2-3 nos.
6.     Tomato – ½ piece.
7.     Garam masala – ½ tsp.
8.     Pepper powder – ½ tsp.
9.     Chilly powder – 1 tsp.
10.   Turmeric powder – ¼ tsp.
11.   Coriander powder – 1 tsp.
12.   Coriander leaves.
13.   Curry leaves.
14.   Oil.
Method of Preparation:
1. Soak the rice with enough water for 4 – 5 hours.
2. Grind it with grated coconut, cumin, egg and boiled rice.
3. Add enough amounts of salt and baking soda. Keep it for ½ hr. to 1 hr.
4. Cook chicken with salt and turmeric powder.
5. Heat oil in a pan, add ginger, garlic, green chillies, curry leaves and onions. Stir for some time.
6.When the onions become transparent add tomato.
7.Add Garam masala, pepper powder, chilly powder, turmeric powder and coriander powder. Fry it for 1 min.
8.Transfer cooked chicken to it. Sauté well. Sprinkle some coriander leaves.
9. Now our masala is ready.
10.Our batter and masala are ready now. Let’s prepare “ Kannappam”.
11.For preparing “Kannappam”, we need “Idali mould”
12.First, fill mould with batter, the add 1 tsp. of chicken masala over it.Like this fill all the moulds. The moulds with batter looks like ‘kannu’ ( eyes).
13.Steam it for 15 – 20 mints.
14.Allow it to cool and unmold it.
15.Now our yummy 'kannappam' is ready to serve.
