Kadai Chicken / Kadai Chicken Masala
       Kadai Chicken / Kadai Chicken Masala is one of the popular chicken recipes.This is a north indian dish where chicken is cooked along with freshly ground spices and capsicum. Flavour of capsicum which is the specialty if this dish.  Let’s see how we can prepare it…………

Preparation Time : 15 mins
Cooking Time : 25 mins 
Serves : 4

Ingredients
  1. Chicken - 10 small pieces
  2. Onion - 1 cup finely chopped
  3. Onion – ½ cup cube sized.
  4. Green Capsicum – ½ cup cube sized pieces
  5. Ginger paste – 1tsp.
  6. Garlic paste - 1 tsp.
  7. Green chillies – 3 nos.
  8. Whole red chilly- 3 nos.
  9. Cumin- 1 tsp.
  10. Turmeric powder - a generous pinch
  11. Chilly Powder – ½ tsp.
  12. Lemon juice - 1 tsp
  13. Tomatoes - 2 big or pureed
  14. Fresh Coriander leaves.
  15. Salt - to taste.
  16. Oil - 2 tbsp.
  17. To make kadai masala powder:
         Coriander seeds - 2 tsp
         Pepper corns - 1 tsp

         Cumin - 1/2 tsp

         Dry Red Chilli -3
         Cinnamon – ½  inch piece

         Cloves – 3 nos.

Method of Preparation
1. Dry roast the ingredients listed under 'to make kadi masala powder' to golden brown then grind it to a semi coarse powder, keep aside.
2. Heat oil in a pan,  add whole red chilly, cumin, ginger paste, garlic paste and green chillies , fry until it becomes soft.
3. Add finely chopped onion and enough amount of salt. Stir until it become light brown colour.
4.Add chilly powder, turmeric powder and ½ portion of Kadi masala. Sauté it for 3-5 mins.
5.Then add chicken pieces and saute for 3mins until the raw texture of chicken changes. Add 1/2 cup of water, cook covered for 10-12 mins until chicken pieces turn soft.
6.Then add tomato puree. Allow it to dry.
7.The add onion and bell pepper. Add coriander leaves and remaining portion of  kadi masala. Let it cook in medium flame for 5 mins. Finally garnish with coriander leaves and switch off the flame.
8.Serve hot with steamed rice or with rotis!!!!
