Muringakka Thoran / Drum stick coconut stir fry |

INGREDIENTS:
- Drumstick Cuts - 1 cup
- Onion / shallot – 1cup chopped.
- Chilly powder- ½ tsp
- Garlic -2 nos. large
- Green chillies – 3-4 nos.
- Turmeric powder - ¼ tsp
- Read chilly powder – ½ tsp.
- Grated Coconut- ¼ cup
- Salt - to taste
- For tempering:
- Mustard seeds - 1 tsp
- Whole Red Chilly -2 nos
- Oil.
- Curry leaves - few
- Heat oil in a pan, add mustard seeds, let it splutters. Then add whole red chilly, curry leaves, green chilly, garlic paste and onion. Fry till onion becomes transparent.
- Add drum stick, turmeric powder, red chilly powder, enough amount of salt and water. cover the pan with a lid and cook well.
- Once the drumstick half cooked, add coconut.
- Stir well and slow down the flame and cook it until water evaporate.
- Our tasty drumstick coconut stir fry is ready to serve. Serve hot with Rice.
