Vegetable Pulao

Vegetable Pulao
    pulao is a simple, flavourful, have a good amount of vegetables. 
There are many different ways to make vegetable pulao. Here I am preparing one of the simple vegetable pulao recipe.

Preparation time: 15 minutes 
Cooking time: 15 minutes 

Serves 4

Ingredients:
  1. Basmathi Rice – 2 cups.
  2. Onion – ½ cup.
  3. Green peas – ¼ cup.
  4. Carrot – ¼ cup.
  5. Capsicum / bell pepper – ¼  cup.
  6. Beans – ¼ cup.
  7. Potato – ¼ cup.  
  8. Cabbage – ½ cup.
  9. Green chillies- 3-4 nos.
  10. Coriander leaves.
  11. Ginger – 1 tsp.
  12. Garlic –  1 tsp.
  13. Ghee – 1 tbspn.
  14. Oil – 2 tbspn.
  15. Lime Juice – 1tsp.
  16. Salt.
  17. Whole spices –

  • Green cardamom – 3-4 nos.
  • Cinnamon – 3 piece 2-3 nos.
  • Cloves – 3-4 nos.
  • Cumin seeds – ½ tsp.
  • Black cumin – ½ tsp.
  • Bay leaves – 2 nos.
Method of Preparation:

  1. Heat the ghee and oil in a wide pan.
  2. Add whole spices to the oil, then add onion fry for few seconds. The add shredded vegetables potato, carrot, ginger paste, garlic paste, green chillies, beans, bell pepper, cabbage,   cooked green peas and some salt. Fry it for another few seconds.
  3. Add coriander leaves, 1 tsp. of lime juice
  4.  Then add basmathi rice to this pan and mix well.
  5. Add water, for one cup of rice add 2 cups of water. Add enough amount of salt. Cover the pan with lid and cook on a low flame, until the vegetables are soft and rice become cooked nicely. Now our rice is cooked well. 
  6. Drizzle 1 tsp. of edible cooking colour. Keep it for 5 min. in a low flame.  
  7. Turn off flame and keep partially covered until ready to serve
  8. Mix in the rice and garnish with chopped coriander leaves.
  9. Now our vegetable pulao is ready to serve.
  10. Serve veg pulao with any Paneer Recipe like Paneer Butter MasalaPalak Paneer, or Kadai Paneer
