Vazhuthananga upperi / Vazhuthanaga mezhukkupuratti / Brinjal Stir fry
Brinjal is one of the healthy vegetable. By using brinjal, we can prepare different dishes. Vazhuthananga upperi / Vazhuthanaga mezhukkupuratti / Brinjal Stir fry is one of the easiest and tastiest dish which goes well with rice, roti etc. Let’s see how we can prepare it….

Ingredients: 
  1. Egg Plant / Brinjal(big) - 1 nos
  2. Green Chilly – 3-5 nos.
  3. Pepper powder – 1 tsp.
  4. Garam masala -  1/2 tsp
  5. Curry leaves.
  6. Salt
  7. Oil for frying

Method of Preparation: 
  1. Cut brinjal to long pieces each about 1 cm thick.
  2. Heat some oil in a pan. Add green chillies, and curry leaves, sauté a while.
  3. Add sliced brinjal pieces. Add some salt.  Sauté well, cover the lid and allow it to cook.
  4. The add pepper powder and garam masala powder.
  5. Stir gently until the brinjal becomes light brown colour or separate from the pan.
  6. Serve hot, tastes great with rice and rotis, etc...
  7. Enjoy!!!!
