Ingredients:
- Egg - 5 no.
- Maida
– 1 cup.
- Onion – ½ cup, finely chopped.
- Ginger
paste – ½ tsp.
- Garlic
paste – ½ tsp.
- Green Chillies – 1 tsp. Finely Chopped.
- Turmeric powder – 1 pinch.
- Pepper powder – 1 pinch.
- Chilly powder – ½ tsp.
- Garam Masala powder – 1 pinch.
- Fennel seed powder – 1 pinch.
- Coriander Leaves finely
chopped.
- Curry Leaves Finely Chopped.
- Salt to taste.
- Oil for frying.

Method of
preparation:
- Take
maida in a bowl. To this add one egg’s white and enough amount of salt. Add
water little by little and make a smooth and thick batter.
- Hard
boil 4 eggs, remove it’s shell. Cut boiled eggs into equal halfs. Remove egg
yolks from each halfs.
- Make
a smooth thick batter with maida,salt and little water. Cut the boiled egg into
two equal halfs. Take out the egg yolk and keep it aside.
- Heat oil in a pan. Add onion,
ginger, garlic, curry leaves, green chillies and some salt. Saute it well until
the onion becomes transparent.
- Then add turmeric powder, chilly
powder, pepper powder, fennel powder and garam masala powder. Sauté a while.
- Transfer the cooked egg yolk ( which
we already removed from egg white), mix well with masala. Sprinkle some
coriander leaves, mix well and switch of the flame.
- Fill masala
in the part of the boiled egg from where we took out the yolk.

- Dip the
stuffed eggs in the maida batter which we already prepared.
- Heat oil
in a pan, deep fry untill it becomes golden brown colour.

- Transfer
it to kitchen tissue.
- Now our
easy, tasty and yummy “egg nirachathe” is ready to serve….
- Serve hot,
enjoy!!!!
