Ingredients:
  • Kyma / jeerakasala rice – 2 cup.
  • Ghee – 6 tbsp.
  • Onion – 1 cup sliced and 1/2 cup chopped.
  • Cinnamon (Karuvapatta) – 2 inch stick
  • Cardamom – 4
  • Cloves – 4
  • Bay leaves – 2 nos ( optional)
  • Ginger- 1’’ inch piece.  
  • Raisins & cashew nuts – 10gms. each.
  • Coriander leaves for garnishing.
  • Water – 3 cups.
  • Salt.

Method of preparation:

  1. Wash and drain the rice well.
  2. Heat 4 tbsp. of ghee in a pan. Fry raisins, cashew nuts and onions. Keep it aside.
  3. To this remaining ghee, add whole spices and saute for 2-3 min.
  4. Add finely chopped onion and cook till it becomes soft. Add ginger.
  5. To this transfer the washed rice and fry for 5-6 min.
  6. Pour boiling water and enough amount of salt. pour 1 ½ cup of water for 1 cup of rice. Cover it and allow it to cook in a low flame until all water evaporates.
  7. When water gets evaporates, give a stir, and level it. Sprinkle half portion of fried cashew nuts, raisins, onion  and some coriander leaves. Sprinkle 2 tbspn. of ghee on the top of it.
  8. Close the lid and keep it for 15 - 20 mins. in low flame, then switch off the flame and keep it for 10-15 mins.
  9. Mix it well and garnish with remaining portion of fried cashew nuts, raisins, onion, and coriander leaves.
  10. Now our tasty Malabar ghee rice is ready to serve. Serve hot with Malabar chicken curry, mutton curry. Etc. Enjoy!!!

Tips :

If you want rice to be more cooked add 4 cups of water.
You can cook in a pressure cooker also.

  1. This Ghee Rice/Neychoru reminded me of Bengali Ghee Bhat that we had prepared at college,back when I was doing Hotel Management.It's amazing how desi ghee can lift humble rice to celestial heights!
