Kozhi Kanji / Chicken Kanji / Chicken Porridge Malabar Ifter Dish for Ramadan

Ingredients:
Chicken –
300 gms.
Basmathi
rice / ponni or sona masoori- 1 cup.
Onion – 1
,chopped.
Ginger –
2” piece 1 no.
Garlic –
4-5 nos.
Tomato –
1 chopped.
Shallots
– 2 tbspn. Chopped.
Curry
leaves.
Coriander
leaves.
Chilly
powder- 2 tsp.
Turmeric
powder- 1/2 tsp.
Fennel
powder- ½ tsp.
Coriander
powder- 1 tsp.
Garam
masala- 1/2 tsp.
Fenugreek
seeds – ½ tsp.
Pepper
corns – 1 tbspn.
Basen
powder – 2 tbspn.
Ghee – 3
tbspn.
Coconut
milk- 2 cups.
Water- 4-5
cups.
Salt- to
taste
Kozhi Kanji / Chicken Kanji / Chicken Porridge Malabar Ifter Dish for Ramadan
Method of Preparation:
Take a
large pot. To this add rice, chicken, onion, ginger, garlic, tomato, curry
leaves, chilly powder, turmeric powder, fennel powder, coriander powder, garam
masala, fenugreek seeds, pepper corns and enough amount of salt.
Mix well. Add 3-4 cups of water. Cook the rice and chicken till it has cooked well. (If using
pressure cooker cook till 2-3 whistles.)
Then add
shallots, coriander leaves, and basen paste when rice and chicken cooked well.
Cook it
for another 5 mins. Then add ghee and coconut milk, combine well.
Allow it
to simmer. Check salt and add it if needed.
Switch of
the flame.
Garnish
with coriander leaves and serve hot.
