Ingredients:
  • Achinga payar / Long beans -2 cups. 
  • Green chilies - - 3-4 nos.,cut vertically
  •  Shallots – ¾ cup. Sliced
  • Coconut pieces-1/4 cup.
  • Turmeric powder-1/4 tsp
  • Salt.
  • Water as required.
For tempering:
  • Coconut oil – 2 Tbspn.
  • Mustard seeds – ½ tsp.
  • Garlic -2 cloves, finely chopped
  • Dry Red chilly flakes – 1 tbspn.
  • Curry leaves.

Method of preparation:
  1. Cut long beans into 1.5" long pieces. 
  2. Take achinga payar/long beans in a pan. Add green chilies, shallots, coconut pieces, turmeric powder, salt and enough amount of water. Close the lid and cook for about 8 to 10 minutes.Keep aside. 
  3. Heat oil in a pan. Add mustard seeds when it splutters add garlic, red chilly flakes and curry leaves, saute it for some time.
  4. Then add cooked achinga payar / long beans and stir well. Saute for few minutes over medium flame.
  5. Now our achinga payer mezhukkupuratti is ready to serve. Serve hot with rice. Enjoy!!!
