Ingredients:
Achinga payar / Long beans -2 cups.
Green chilies - - 3-4 nos.,cut
vertically
Shallots – ¾ cup. Sliced
Coconut pieces-1/4 cup.
Turmeric powder-1/4 tsp
Salt.
Water as required.
For tempering:
Coconut oil – 2 Tbspn.
Mustard seeds – ½ tsp.
Garlic -2 cloves, finely chopped
Dry Red chilly flakes – 1 tbspn.
Curry leaves.

Method of preparation:
Cut long beans into 1.5" long pieces.
Take achinga payar/long beans in a
pan. Add green chilies, shallots, coconut pieces, turmeric powder, salt and
enough amount of water. Close the lid and cook for about 8 to 10 minutes.Keep
aside.
Heat oil in a pan. Add mustard seeds
when it splutters add garlic, red chilly flakes and curry leaves, saute it for
some time.
Then add cooked achinga payar / long
beans and stir well. Saute for few minutes over medium flame.
Now our achinga payer
mezhukkupuratti is ready to serve. Serve hot with rice. Enjoy!!!
