Ingredients:
- Beetroot (grated) -1 cups.
- Curd – 1 cup.
- Salt.
For making coconut paste:
- Grated coconut – 1 cup.
- Mustard seeds – 1 tsp.
- Cumin seeds – ½ tsp.
- Green chillies -3-5 nos.
- Garlic – 2-3 nos. (optional)
- Ginger- ½ inch piece
For tempering
- Coconut oil – 2 tbspn.
- Mustard seeds – 1tsp.
- Whole red chilly.- 2 nos.
- Curry leaves.

Method of preparation:
- Take an earthen pan, Pour 1 tbspn. of coconut oil.
- Transfer beetroot and enough amount of salt to it. Mix well, close the lid and allow it to cook. Cook it in a a low- medium flame for about 10 mins.
- Mean time make coconut mixture. For this grind together with mustard seeds, cumin seeds, grated coconut, ginger and green chillies into a smooth paste by adding some water or curd.
- Once the beetroot is cooked well, pour the grounded coconut paste to the pan, saute it well. Let it cook for another 5 minutes in medium flame, Allow the water to evaporate.
- Transfer the beaten curd to the pan and warm it, do not allow it to boil. Then switch off the flame.
- Heat another pan, splutter mustard seeds in coconut oil, when it splutters add curry leaves whole red chillies. Pour this tempering in to the cooked pachadi.
- Now our beetroot pachadi is ready to serve. Serve with plain rice.
