Pachadi is one of the tasty and easy side dish in Onam Sadhya. Today i am preparing a pachadi by adding beetroot, Let' see how we can prepare this awesome Kerala Dish.

Ingredients:
  • Beetroot (grated) -1 cups.
  • Curd – 1 cup.
  • Salt.

For making coconut paste:
  •    Grated coconut – 1 cup.
  •    Mustard seeds – 1 tsp.
  •    Cumin seeds – ½ tsp.
  •    Green chillies  -3-5 nos.
  •    Garlic – 2-3 nos. (optional)
  •    Ginger- ½ inch piece

For tempering
  •    Coconut oil – 2 tbspn.
  •    Mustard seeds – 1tsp.
  •    Whole red chilly.- 2 nos.
  •    Curry leaves.

Method of preparation:

  1. Take an earthen pan, Pour 1 tbspn. of coconut oil.
  2. Transfer beetroot and enough amount of salt to it. Mix well, close the lid and allow it to cook. Cook it in a a low- medium flame for about 10 mins.
  3. Mean time make coconut mixture. For this grind together with mustard seeds, cumin seeds, grated coconut, ginger and green chillies into a smooth paste by adding some water or curd.
  4. Once the beetroot is cooked well, pour the grounded coconut paste to the pan, saute it well. Let it cook for another 5 minutes in medium flame, Allow the water to evaporate.
  5. Transfer the beaten curd to the pan and warm it, do not allow it to boil. Then switch off the flame.
  6. Heat another pan, splutter mustard seeds in coconut oil,  when it splutters add curry leaves whole red chillies. Pour this tempering in to the cooked pachadi.
  7. Now our beetroot pachadi is ready to serve. Serve with plain rice.
  8. Enjoy!!!
