Ingredients:

  • Beetroot - 2 medium size peeled and chopped very finely
  • Shallots / Onion – ½ cup.
  • Garlic – 2 - 4 cloves chopped
  • Green chillies – 3-4 nos. chopped.
  • Grated Coconut - 1 cup
  • Salt to taste

For Seasoning:

  • Coconut Oil - 2 tbspn.
  • Mustard Seeds - 1 tsp.
  • Whole red chillies – 4-5 nos.
  • Curry Leaves.

Method of Preparation:
  1. Take beetroot in a bowl. To this add shallots, garlic, green chillies, grated coconut and salt. Mix well, and keep it for 10- 15 mins.
  2. Heat 2 tbspn. of coconut oil in a pan. Add mustard seeds, when it splutter, then add Whole red chilly and curry leaves. Saute for few seconds…
  3. Transfer beetroot mixture, saute for 5 mins. No need to pour water, cover with a lid, cook it in a medium to low flame till the beetroots are tender and completely cooked.Stir in between.
  4. Evaporate any water left if beetroot cooked well. Switch off the flame.  
  5. Now our tasty beetroot thoran is ready to serve. Serve hot with plain rice. Enjoy!!!!
