Ingredients:
- Beetroot - 2 medium size peeled and chopped very finely
- Shallots / Onion – ½ cup.
- Garlic – 2 - 4 cloves chopped
- Green chillies – 3-4 nos. chopped.
- Grated Coconut - 1 cup
- Salt to taste
For
Seasoning:
- Coconut Oil - 2 tbspn.
- Mustard Seeds - 1 tsp.
- Whole red chillies – 4-5 nos.
- Curry Leaves.

Method
of Preparation:
- Take beetroot in a bowl. To this add shallots, garlic, green chillies, grated coconut and salt. Mix well, and keep it for 10- 15 mins.
- Heat 2 tbspn. of coconut oil in a pan. Add mustard seeds, when it splutter, then add Whole red chilly and curry leaves. Saute for few seconds…
- Transfer beetroot mixture, saute for 5 mins. No need to pour water, cover with a lid, cook it in a medium to low flame till the beetroots are tender and completely cooked.Stir in between.
- Evaporate any water left if beetroot cooked well. Switch off the flame.
- Now our tasty beetroot thoran is ready to serve. Serve hot with plain rice. Enjoy!!!!
