For marination:
- Chicken – 500 Gms / 1 cup.
- Ginger paste – 1 tsp.
- Garlic paste – 1 tsp.
- Green chili – 1 tsp.
- Shallots – 2 Tbspn.
- Turmeric powder – ½ tsp.
- Pepper powder – ½ tsp.
- Chilly powder – 1 ½ tsp.
- Garam Masala powder – ½ tsp.
- Coriander powder – 1 tsp.
- Edible Red colour – ½ tsp.
- Lime Juice – 1 tsp.
- Salt.
- Onion – 1 cup chopped.
- Ginger paste – 1 tsp.
- Garlic paste – 1 tsp.
- Green chili – 3 - nos. finely chopped.
- Tomato – 1 no.
- Curry Leaves.
- Coconut Oil – 2-3 Tbspn.
Chicken Varattiyathe / Chicken Fry Kerala Style
Method of Preparation:
- Marinate chicken with 1 tsp each of ginger ,garlic, green chili, shallots, turmeric powder, pepper powder, chilly powder, garam gasala powder, coriander powder, edible red colour, lime juice and salt. Set aside for 30 mints – 1 hour.
- Heat oil in a pan. Add onion, ginger, garlic, curry leaves, green chillies and some salt. Saute it well until the onion becomes transparent. Then add tomato and mash it.
- Then transfer marinated chicken. Mix well, close the lid and allow it to cook. No need to add water.
- Stir in between.
- Allow it to cook for 10-15 mins. In a medium flame.
- Open the lid and stir in between. Allow it to dry.
- Now our tasty chicken varattiyathe / chicken fry is ready to serve.
- Serve hot with rice, chapatti etc. Enjoy!!!
