Aviyal Kerala Style അവിയൽ

 Aviyal Kerala Style
    Aviyal (avial) is a delicious preparation made with mixed vegetables, curd, coconut and seasoned with coconut oil and curry leaves. It one of the important dish in Onam Sadya. 
      Avial was born out of the need to use up leftover vegetables. For the better avail, we need four important things,
1.     Fresh and raw coconut.
2.     Fresh and raw Curry leaves.
3.     Fresh and raw coconut oil.
4.     Fresh vegetables.
      It's important to cut the vegetables the same way for even cooking. Generally, the vegetables are cut into 3"long 1/2" wide strips and cooked in a staggered manner, clubbing the ones that have same cooking time together.

Preparation time: 15 minutes 

Cooking time: 20 minutes

Serves 4-6
Ingredients
1.     carrots strips – ½ cup.
2.     snake gourd strips  - ½ cup.
3.     brinjal strips – ½ cup.
4.     raw banana strips  - ½ cup.
5.     elephant yam strips  - ½  cup.
6.       old cucumber strips - ½  cup.
7.      drumstick pieces  - 6,  3" long.
8.     Ash gourd -3/4 cup.
9.     Carrot -1.
10.   Beans -6-7.
11. Curd – ½ cup.
12.turmeric powder -  tsp.
13.curry leaves -  few.
For the grinding
1.      grated coconut - 2 cups.
2.     green chillies  -  2-3 nos.
3.     curry leaves -  few.
For the seasoning
1.  Coconut oil - 2-3 tsp.

Methods of Preparation

1. Peel the skin and cut all the vegetables into 2 inch long piece.

2.Coarsely grind grated coconut, green chillies and curry leaves. Keep it aside.
3. Take all the vegetables to a pan. To this add turmeric powder, salt, and about 1/2 to 3/4 cup water and mix well.
4.Cook covered on a low flame for about 10-12 mins or until the vegetables are cooked yet hold their shape.
5. Transfer the grounded coconut paste and cook for a few minutes. Remove from flame.
6.Add curd and mix well. Check for salt. 
7.Add curry leaves.
8. Drizzle the coconut oil on top and mix gently.
9. The avial will be a bit watery still but it will dry up as the vegetables absorb it as they sit. Set aside covered loosely for an hour before serving.
