Malabar Ghee rice / Neychoru |
Hai….Ney choru……….. It is a super delicious, easy to
prepare and mouth watering, yummy dish from Malabar………

Ingredients:
1.Kyma / jeerakasala rice – 2 cup.
2.Ghee – 6 tbsp.
3.Onion – 1sliced.
4.Cinnamon (Karuvapatta) – 2 inch stick
5.Cardamom – 4
6.Cloves – 4
7.Water – 3 cups.
8.Raisins & cashew nuts – 10gms. each.
9.Salt.
10. Green pea(optional, for garnishing)
11. Coriander leaves for garnishing.
12.Ginger- ½ inch piece.
Method of preparation:
1.Wash and drain the rice well.
2. Heat 3 tbsp. of ghee in a pan.
3.Fry raisins, cashew nuts and
onions.
4.Add this reaming oil in a large
pan and add all the spices and saute for 2-3 min.
5.Add finely chopped onion and cook
till it becomes soft. Add ginger.
6.Add rice and fry for 5-6 min
stirring continuously.
7.Add boiling water and salt. Add 1
½ cup of water for 1 cup of rice. Cook it in a low flame until all water
evaporates.
8.When water gets evaporates, give a stir,
level it and sprinkle half portion of fried cashew nuts, raisins, onion and some coriander leaves. Sprinkle 1 tsp. of
ghee on the top of it. Close the lid and keep it for 2-3 mins. in low flame,
then switch off the flame and keep it for 10-15 mins.
9.Mix it well and garnish with remaining
portion of fried cashew nuts, raisins, onion, and coriander leaves( you can
also use green peas).
10. Serve hot with nadan chicken
curry, nadan mutton
curry.
Tips :
1.If
you want rice to be more cooked add 4 cups of water.
2.You can cook in a pressure cooker
also.
