Nadan Vellarikka Pachadi / cucumber pachadi
       Pachadi is one of the delicious side dish of Kerala sadya. Here i am preparing pachadi by using vellarikka / cucumber. Let's see how we can prepare it..........

Cooking Time :20 Minutes
Serves :3 Adult(s)
Ingredients
1.      Cucumber (vellarikka) -  2 cup.(finely chopped)
2.     Curd/Yogurt –  1/2 cup.
3.     Mustardseeds - - 1/2 to 1 tsp
4.     Whole red chilly – 2 nos.
5.     Coconut oil -2 tsp.
6.     Curry leave.
For grinding
7.     Grated coconut -1/2 cup.
8.     Mustard seeds-1 tsp.
9.     Cumin seeds- ½ tsp.
10.  Salt.
11. Water.
Method of Preparation:
1.Remove the skin from the cucumber (vellarikka) and cut into small pieces.
2.Cook the cucumber with little water along with salt.
3.Grind together coconut, cumin seeds mustard seeds and green chilies.
4.Once the cucumber pieces are cooked, add the ground coconut paste.
5.Continue cooking in low flame for another 3 -5  minutes and add the curd and stir well till it becomes thick.
6.Remove from the flame.
7.Splutter mustard seeds and sauté dry red chillies and curry leaves for a few minutes.
8.Pour this over the vellarikka pachadi.
9.Serve with rice.
