Aloo Paratha

Aloo Paratha 
         One of the most popular paratha recipe from north India. Aloo paratha recipe is paratha stuffed with aloo ( potato) mixture. Let's see how we can prepare it............

Prep Time: 1 hour, 10 minutes

Total Time: 1 hour, 10 minutes
Ingredients:
1.Potatoes - 5 medium-sized boiled, peeled and well mashed.
2. Coriander leaves.
3. Ginger – 1tsp.
4.Garlic – 1 tsp.
5.Green chillies – 3 nos.
6.Curry leaves.
7. Salt.
8.Whole wheat flour- 2cups.
9. Vegitable oil.
10.Ghee.
11. Water.
12. Mint leaves.


Method of Preparation:
1.Heat oil in a pan, add onions, garlic, ginger, green chillies, curry leaves, coriander leaves, mint leaves and enough amount of salt. Allow it to cook.
2.Transfer mashed potatoes to it and mix well.
3.Take wheat flour in a pan, add salt and mix well.
4.Now slowly add water, a little at a time and knead well to make a smooth, pliable dough. Cover and set aside for an hour.
5.Divide the dough into golf ball-sized portions and roll between your hands till they are smooth and without cracks.
6.Also divide the potato paste into golf ball-sized portions.
7.Very lightly flour a rolling board.
8.Roll each ball into a 5" circle.
9.Now take a potato masala  mix ball into the center of the circle you just made. Slowly lift the edges and bring together in the center to form a pouch. Press the ends together tightly to close the pouch. Once sealed, press down gently to flatten so that you have a flattened pouch.
10.Lightly flour your rolling surface and roll this pouch into a 7-8" circle.(Don't worry too much if the filling oozes out. This happens often but can be avoided by using a very light hand to roll out the paratha.)
11.Heat oil in a pan and fry the parathas one at a time. The paratha is done when both sides are crispy and golden brown.
12. Serve with chilled yogurt or chutney. Enjoy!!!!
