Brinjal Masala Fry/ Eggplant Masala Fry/ Vazhuthananga Masala
         Brinjal masala fry is one of the tastiest and easiest dish which goes well with rice, chapathi etc. Let’s see how we can prepare it………

Ingredients 
1.     Brinjal- 2 cups ( cut in to long pieces).
2.     Garlic paste – 1 tsp.
3.     Ginger paste – 1 tsp.
4.     Green chillies – 3 nos.
5.     Pepper powder – ½ tsp.
6.     Chilly powder – 1tsp.
7.     Turmeric powder – ¼ tsp.
8.     Coriander powder – 1 tsp.
9.     Garam Masala powder – ½  tsp.
10.   Curry leaves.
11.   Oil - 6 - 7 tbsp
12.   Salt. 
Methods of Preparation:

     Cut brinjal into long pieces.
Take brinjal in a vessel, to this add ginger, garlic, pepper powder,chilly powder, turmeric powder, coriander powder, garam masala
powder and some salt. Mix it well. Keep it for ½ to one hour.
Heat oil in a pan,  add green chillies and curry leaves.
Transfer the marinated brinjal to it, mix well, close the lid and
allow it to cook in a medium flame. No need to add water. Sauté in between. Cook it in a low flame for 10- 15 mints.
Now our brinjal masala fry is ready.
Remove it from the fire.
Serve hot with chappathi, plain rice etc.
