Kai Pathiri Malabar Dish
        Kai pathiri is a Malabar dish which usually prepared as a breakfast dish and in remzhan season. It is a type rice pancakes. Let’s see how we can prepare it………..

Ingredients:
1.     Rice Powder - 2 cups( roasted).
2.     Grated coconut – 1 cup.
3.     Shallots – 1oo gms.
4.     Cumin seed – 2 tsp.
5.     Salt.
6.     Coconut  milk – 1 cup.
7.     Water.
Methods of Preparation :
1.Crush coconut, shallot and cumin seeds together, and keep it aside.
2.In a vessel boil 2 cups of water with salt.
3.When it boils add coconut mixture and rice flour with constant stirring (For 1 cup of rice flour take 1 cup of water). Keep it on simmer for ½ - 1minutes  and turn of the flame. Close the lid and keep for 5- 10 minutes.
4. Knead the dough thoroughly with your hands by applying water. Do it in a single stretch. Pathiri will be softer if you knead it when the dough is still hot. Knead it until the dough becomes uniformly smooth and less sticky.
5. Take a medium large sized (apple sized) dough and flatten it by using your hand in a rotatory manner. Make it a thick round pathiries.
6. Heat an earthen pan. Cook both sides till both sides puff up.
7. Soak this pathiries in salted coconut milk. ( it help your pathiri become more soft and tasty).
8. Serve it with chicken curry, mutton curry, beef curry or dry chemmen ( prawn) chammanthy etc. Enjoy!!!!
