Vegetable Biryani Kerala Style |
A very simple and easy Biryani
recipe, Vegetable biriyani…….This goes well with raitha, pickle etc. Let's see how to prepare Kerala style vegetable biriyani.........

Ingredients
1. Basmati rice – 1 cup
2.Onion – 1
3.Green chilli – 2.
4. Ginger – 1 tsp.
5.Garlic paste - 1
tsp.
6.Tomato -1.
7.Mixed Vegetables
- 2 cups
(Carrot, beans, cauliflower, fresh peas, potatoes etc. )
8.Mint leaves – handful
9.Coriander leaves – handful
10.Lemon juice-1 tbsp / dry lemon.

14.Garam masala – 2
tsp
15.Green cardamoms
16.Cloves
17.Cinnamon
18.Bay leaf
15.Salt as required
16. Yogurt 1/2
cup.

ghee.
18. Fennel seeds –
1 tsp.
19.Cashew nuts –
10gm.
20.Raisins – 10gms.

Methods of preparation:
1. Cut onions into thin strips and fry it in oil
till golden brown. Add it before serving.
2. Cut carrots,
beans and potatoes lengthwise. Chop tomatoes.
3.Wash and soak
basmati rice for 20 minutes, drain and keep it aside.
4.Wash
cauliflowers,cut it into florets and put it in boiling water with a little salt
for 2-3 minutes. Drain the water and keep it aside.
5. Soak soyabean chungs for 30 mins.
6.Heat
oil in a pan, add whole garam masala, then add vegetables. add ginger-garlic paste
and sauté for a few more minutes.
7.Add green chillies, garam masala, mint and coriander leaves,
lemon juice / dry lemon, needed salt and sauté for some more time. Then add 2
cups of boiling water. Cook well.
8.Take 2 table spoon of olive oil in
a pan. Add bay leaves and soaked rice. Allow it to cook.
9. Now our rice is ready.
10. Take a pan, spread ghee on the
bottom of the pan, Spread biriyani masala which we already cooked, springle
some fried onions and leaves, 1/2 of the
rice evenly spread over the vegetable masala.
11.Sprinkle some fried
onions,coriander leaves, cashews and raisins over it and the remaining rice, also
some the saffron milk (saffron is optional) .
12. Keep it in a medium flame for 5
minute, Mix the biriyani very well after 30 minutes.
