Cauliflower Biryani |
Biriyani……this is an easy and super delicious biriyani
prepared by using cauliflower. It’s taste is awesome. Let’s see how it

Ingredients
1.Cauliflower
- 1 medium sized,cut into small florettes
2.Fresh/frozen
greenpeas - 1/4 cup.
3. Ghee - 1 tbsp.
4. Oil – ½ cups.
5.Cumine - 1 tsp.
6.Onion - 1,sliced.
7. Tomato - 1
8.Green chilly – 2.
9.Garlic - 3-4 small cloves.
10.Ginger - 1 small piece.
11.Cardamom- 4 nos.
12.Clove – 4 nos.
13.Cinnamon - 1 piece each
14.Red chilly powder - 1/2 tsp.
15.Turmeric Powder – ½ tsp.
18.Garam masala – 1 tsp.
19.Black Pepper powder- 1 tsp.
20. Salt.
21. Coriander leaves - a few,chopped.
22. Mint leaves.
23. Lemon juice – 1 tsp.
24.Cashe nut paste – 2 tsp.
For the rice
1. Basmati Rice - 1 cup
2.Ghee - 1 tbsp
3.Water - 2 cups
4.Salt to taste.
Method of Preparation:
1.Wash the cauliflower florettes well under running water. Drain and keep aside.
a. Preparation of Masala
1. Mix
together turmeric powder, chilli powder, black pepper powder, garlic paste, ginger past lime juice and salt
mix it well and make a paste. Apply this masala over the califlowder. Keep aside for 1/2 an hour.
2.Heat
oil in a pan, shallow fry the califlowder pieces and keep it aside.
3.Heat
oil in a pan. Add onions, ginger paste,
garlic paste, green chilies and fry well, then add tomato curry leaves,
coriander leaves and mint leaves.
4. Stir
well, add turmeric powder, chilli powder, black pepper powder, cumine powder
and garam masala.
5.You can
also add cashew nut paste to it.
6. Put
fried cauliflower to it and cook it in a low flame for 3- 5 mins.
b. For the rice
1. Heat clarified butter in
pan. Add cinnamon, cardamom, curry leaves and cloves. Add washed and cleaned
rice. Stir well until the water gets evaporates. Add the stockings to rice.
When water comes to a boil, turn flame to low and cover pan. Cook on low flame
till the entire water absorbed. The rice is done.
c. Dum
procedure:
1. Take a pan, spread ghee on the
bottom of the pan, evenly spread 1/2 of the rice, Spread cauliflowder masala
which we alredy prepaered. Then spread
rice evenly spread over the masala.
2. Sprinkle coriander leaves, mint
leaves, green peas over it.
3. Close the vessel and seal the edges
of the lid.
4. Leave it on the gas stove on low
flame .Traditionally u put coal on top of then biriyani vessel as heat has to
come from both sides. Do this for almost 20 mints.
5.Open the lid and combine well. Yummy
cauliflower biriyani is ready to serve.
6. Garnish
the top with a tomato and coriander leaves.
7. For best taste serve it with raita, dates pickle, coconut
chammanthi.
