Sweet Pumpkin Dessert / Sweet Mathan Curry 
    Pumpkin dessert…….with sweet……. That is sweet pumpkin dessert / Mathan curry. It is a super delicious dish prepared by using sweet pumpkin, red oriental beans, jagerry, coconut, rice flour  etc…..Let’s see how to prepare this……..

Ingredients:
1.     Sweet pumpkin – 1cup.
2.      Red oriental beans – 1cup.
3.     Jagerry – 1cup.
4.     Grated coconut – 1cup.
5.     Rice flour – 1 ½ cups.
6.     Salt.
7.     Water.
Method of Preparation:
1. Soak jaggery in half a cup hot water until it dissolves and filter the impurities.
2. In a vessel boil 1 cups of water with salt. When it boils add the rice flour with constant stirring (For 1 cup of rice flour take 1 cup of water). Keep it on simmer for ½ - 1 minutes  and turn of the flame. Close the lid and keep for 5- 10 minutes.
3. Knead the dough thoroughly with your hands by applying water. Do it in a single stretch.
4. Take a small ball of the dough( 1 tsp ) and roll it into a ball and gently press it down and make an impression in the middle with the thumb.  
5. Cook  sweet pumpkin and red oriental beans.
6. Take a wide pan. Add cooked sweet pumpkin, red oriental beans and jagerry juice. Allow it to boil.
7.When it starts to boil, transfer rice dumpling to it and cook in a medium flame for 10 minutes.
8. Add 1   cup   of water to ½ cup of rice flour and make a lose consistency.  Transfer this rice paste to our dessert. Add enough amount of water and allow it to cook.
9. Add grated coconut and switch of the flame.
10.Now our dessert is ready to serve.
