Cauliflower Chettinad curry

Cauliflower Chettinad curry 
    We can prepare verities of food by using cauliflower. Cauliflower Chettinad curry is a super delicious, hot and spicy, vegetarian dish. Let’s see how we can prepare it.......

Ingredients:
1.Fresh Cauliflower – 1/2 kilo – cut into florets.
2.Onion -1 small chopped.
3.Tomato – 2 nos.

4.Garlic -2-3 cloves-chopped

5.Ginger -2″ size peeled and chopped.
6.Curry leaves.
7.Coriander leaves.
8.Mustard seeds – 1 tsp.
9.Turmeric powder -1/2 tsp.
10.Salt.
11.Oil.
12.Cashew nut paste – 3 tsp.
13.Fenugreek seeds – 1tsp.
14.Potato- 1large.

15.To be dry roast and wet ground into paste:
    1.Coconut – grated 2 table spoon.
    2.Whole red chilly – 4 nos.
    3. Black pepper – 1tsp.
    4.Cinnamon -2 sticks.
    5.Cloves – 3 nos.
    6.Cardomom – 3 nos.
    7.Coriander seeds 1 fistful.
    8. Cumin seeds- 1 tsp.

Methods of Preparation:
1.Dry dry roast coconut, whole red chilly, black pepper, cinnamon, cloves, cardamom, coriander seeds and cumin seeds. Allow it to cool and make a smooth paste. 
2.Heat oil in a pan, add mustard seeds, when it splutters add curry leaves, onions, ginger, garlic, green chillies, and tomato paste. And enough amount of salt and allow it to boil.
3.When it boils, add turmeric powder and grounded paste to it. When it boils transfer the cauliflower and potato. Allow it to cook. And add cashew nut paste.
4.Heat oil in a pan,  Fry cauliflower till it coats oil on all sides. Then add salt, turmeric powder.Cover and cook for few minutes. 
5.Then add wet-ground paste to this. 
6. Now add powdered spices, to this and drizzle few spoons of oil over it. Fry them for some more time. 
7.Pour enough amount of water and allow it to boil. Switch of the flame when it boil.
8.Garnish with curry leaves.
9.Serve hot as a side dish to parotta, chappathi, Roti, Nan, Iddiaapam, Aappam etc. Enjoy!!!

    Me when to add Fenugreek seeds? Sorry I couldn't see that in the recipe
