Tomato rice

Tomato rice 
        Tomato rice is a very delicious and simple to prepare recipe. Rice cooked with ripped juicy tomatoes are awesome. Let’s see how we can prepare it……………

Preparation Time : 15 to 20 mins to cook rice

Cooking Time : 15 to 20 mins
Serves : 2 to 3
Ingredients
1.Tomatoes - 4 medium size chopped.
2.Mustard Seeds - 1 tsp.
3.Ghee – 2 table spoon.
4.Cinnamon - 1 inch stick.
5.Fennel Seeds - 1 tsp.
6.Cardamom - 3 crushed.
7.Cloves – 4 nos.
8.Broken cashewnuts – 1 table spoon.
9.Channa dal – 1 table spoon.
10.Curry leaves - 2 spring
11.Onion - 2 medium size sliced thinly.
12.Garlic – 1 tsp.
13.Ginger – 1 tsp.
14.Green Chillies – 2 tsp.
15.Garam Masala Powder - 1 1/2 tsp.
16.Hing- 1 pinch (optional)
19.Salt to taste.
20.Rice - 2 cups of cooked rice.
Method of Preparation:
1.Heat ghee in a pan. Add mustard,   cinnamon, cardamom, fennel seeds,  curry leaves and mustard seeds. Sauté for 30 sec.
2.Add channadal, urad dal and broken cashew nuts.
3.When they turn color, add the chopped onions and fry them till they turn transparent.
4.Add chopped green chilli, garlic and ginger and tomatoes, fry for 5 minutes.
5.Add spices we already mentioned and keep frying.
6.Now add the chopped tomatoes and cook it for 10 mins till the tomatoes turn mushy. Sprinkle hing and some coriander leaves.
7.Transfer the rice and toss well with the tomato mixture we already prepared. Let it cook for couple of  min till it gets nice and hot.
8.Serve this with raita or any sabzi.
