Ingredients:
- Shredded carrots - 2 cups.
- Milk - 2 cups .
- Unsalted butter / Ghee - 3 tablespoons.
- Sugar - 1/2cup.
- Cardamom powder - 1/2 teaspoon
- Cashew nuts and raisins (To garnish)
- Heat ghee in a pan, roast the cashew nuts and raisins remove cashew nuts for garnishing.
- Transfer the shredded carrots to the remaining cashew nuts and raisins and stir-fry for about seven to eight minutes.
- Carrots should be tender and slightly changed in color.
- Add the milk and allow it to boil. Then add some cardamom powder.
- Cook until the milk dries. This will take about 10-15 minutes.
- Next add the sugar, and stir-fry for another three to four minutes until the halwa starts to leave the side of frying pan.
- Garnish with cashew nuts.
- Enjoy!!!!
- Gajar Halwa can be refrigerated for up to one week and kept in the freezer for up to two months.
