Olan Onam sadhya recipe / Winter Melon Coconut Stew |
Ingredients:
- Winter melon / Kumbalanga– 1 cup, cubed.
- Black-eyed beans / vanpayar – 1/2 cup.
- Green chili – 3nos. slitted.
- Thick coconut milk – 1 cup.
- Curry leaves.
- Coconut oil – 1 tsp.
- Salt to taste

Method
of Preparation:
- Cook red beans by adding enough salt and water. Strain the excess water and keep aside, when it cooked. The beans should not be over cooked and it should retain its shape.
- Take cubed winter melon, slit green chilies and salt in an earthen pan. Pour 1/2 cup of water. Cover and cook until half cooked. Melon should not be overcooked and it should retain its shape.
- Add the cooked beans to it and mix well. Allow it to boil.
- Add coconut milk and curry leaves. Cook on low flame for 5-7 mins. Remove from the fire and drizzle some coconut oil.
- Serve in Kerala Sadhya. Enjoy!!!!
