Kalathappam / Rice pan cake with Jaggery Traditional Kerala Snack |

Ingredients
- Rice - 1 cup.
- Cooked rice - 1/4 cup.
- Jaggery -3-4.
- Grated coconut - 1/4 cup.
- Shallots - 10 nos, chopped.
- Coconut pieces – 4 tbspn.
- Ghee – 1 Tbspn.
- Baking soda - 1/4 tsp
- Cardamom pods – 2-3 nos.
- Cumin seeds – ½ tsp.
- Salt – a pinch.
- Coconut oil – 4 Tbspn.

Method of Preparation
- Soak rice for 5-6 hrs in water.
- Melt gaggery by adding 1 cup of water.
- Grind rice with grated coconut, cumin seeds, cardamom pods, baking soda, salt and cooked rice by adding enough amount of melted jaggery water. Pour some more jaggery and make it to a medium thickness batter.Allow the batter to rest for ½ - 1 hr.
- In a thick sauce pan pour 4 Tbspn of coconut oil.
- Fry coconut pieces and shallot, keep it aside.
- Add half portion of fried coconut pieces and shallots to the batter we already prepared, gently warm the mixture by stirring continiously .
- Pour 1 tbspn. of ghee in remaining oil, then pour the batter, cover it and allow it to cook. Cook it in a high flame for 3-5 mins, then open the lid and spread remaining fried coconut pieces and onion over the batter. Then reduce the flame, cook it in a low flame for 30-45 minutes.
- Inseart a tooth pick / knife to check whether
it is cooked or not (inserted comes out clean).
