Aviyal/ avial Kerala Style Onam sadhya Recipe |
Ingredients
- Raw banana strips - ½ cup.
- Drumstick pieces - 8, 3" long.
- Pumpkin – ½ cup.
- Bitter guard – ½ cup.
- Elephant yam strips - ½ cup.
- Carrots strips – ½ cup.
- Beans – ½ cup.
- Curd – 1 cup.
- Turmeric powder - ½ tsp.
- Salt.
For the grinding:
- Grated coconut - 2 cups.
- Green chillies - 5-7 nos.
- Curry leaves - few.
For the seasoning:
- Coconut oil - 2-3 tsp.
- Curry leaves - few.

Methods of Preparation
- Peel the skin and cut all the vegetables into 2 inch long piece.
- Coarsely grind grated coconut, green chillies and curry leaves. Keep it aside.
- Take an earthen pan.
- Take all the vegetables to it. To this add turmeric powder, salt, and about 1/2 to 3/4 cup water, mix well.
- Cover the lid and cook it in a low flame for about 10-12 mins or until the vegetables are cooked yet hold their shape.
- Transfer the grounded coconut paste and enough amount of salt, cook for a few minutes. Switch of the flame.
- Add curd and mix well. Check for salt.
- Add curry leaves. Drizzle the coconut oil on top and mix gently.
- Now the consistency of avial is a bit of watery, it will dry up as the vegetables absorb water. Cover it for one hour and serve it.
