There is saying in Kerala that “inji curry is equivalent to having a 101 curries”. Inji curry is hot, sweet and sour inevitable dish in Onam sadhya. Ginger, green chilies, tamarind and jaggary which gives amazing taste for this recipe. Let's see how we can prepare this awesome recipe.....

Ingredients
  • Ginger – 200 gm, finellly chopped.
  • Green chilies – 4 – 5, finelly chopped.
  • Tamarind – Small lime-sized.
  • Jaggery – 2 tbsp.
  • Hing/Asafoetida – A pinch (Optional)
  • Salt. 
For tempering:
  • Coconut oil – 2 Tbspn.
  • Mustared seeds – ½ tsp.
  • Whole red chilly - - 4 nos.
  • Curry leaves.
 For grinding:
  • Grated Coconut – ½ cup.
  • Turmeric Powder- ¼ tsp.
  • Chilly Powder – 1 tsp.

Method of Preparation:
  1. Heat oil in a pan, transfer grated coconut to it. Roast until it becomes brown color. Add red chilly powder and turmeric powder.  Allow it to cool and make it to a fine paste.
  2. Heat oil in a pan, add mustard seeds, when it splutters add whole red chilly and curry leaves.
  3. To this transfer chopped ginger and green chillies. Fry ginger pieces until brown and crispy.
  4. Pour tamarind extract. Allow it to boil.
  5. Then transfer grounded coconut paste. Add small piece of Jaggary and allow it to boil.
  6. Add enough amount of salt, mix well and switch of the flame.
  7. Now our tasty inji curry is ready to serve. Serve hot with rice. Enjoy!!!!
