Ingredients
- Ginger – 200 gm, finellly chopped.
- Green chilies – 4 – 5, finelly chopped.
- Tamarind – Small lime-sized.
- Jaggery – 2 tbsp.
- Hing/Asafoetida – A pinch (Optional)
- Salt.
- Coconut oil – 2 Tbspn.
- Mustared seeds – ½ tsp.
- Whole red chilly - - 4 nos.
- Curry leaves.
- Grated Coconut – ½ cup.
- Turmeric Powder- ¼ tsp.
- Chilly Powder – 1 tsp.

Method
of Preparation:
- Heat oil in a pan, transfer grated coconut to it. Roast until it becomes brown color. Add red chilly powder and turmeric powder. Allow it to cool and make it to a fine paste.
- Heat oil in a pan, add mustard seeds, when it splutters add whole red chilly and curry leaves.
- To this transfer chopped ginger and green chillies. Fry ginger pieces until brown and crispy.
- Pour tamarind extract. Allow it to boil.
- Then transfer grounded coconut paste. Add small piece of Jaggary and allow it to boil.
- Add enough amount of salt, mix well and switch of the flame.
- Now our tasty inji curry is ready to serve. Serve hot with rice. Enjoy!!!!
